Millet Kambu Dosai (Pearl Millet Dosa): A Healthy Twist on a Classic South Indian Breakfast

2. Rinse and drain the water from idli rice, urad dal, and poha. Grind them into a fine paste using a wet grinder or mixer grinder. Add water as required to make a smooth batter.

3. In a separate bowl, mix kambu flour and salt together. Add water slowly and mix well to make a thick batter without lumps.

4. Add the urad dal and poha batter to the kambu flour batter. Mix well. The consistency of the batter should be slightly thicker than regular dosai batter. Cover the batter and let it ferment for 6-8 hours or overnight.

5. Once the batter is fermented, stir it well. If the batter is too thick, add a little water to adjust the consistency.

6. Heat a non-stick tawa or griddle on medium flame. Once the tawa is hot, pour a ladleful of batter in the center of the tawa and spread it in a circular motion to form a thin dosai. Drizzle some oil around the edges of the dosai.

7. Cook the dosai on medium flame until the bottom turns golden brown and crisp. Flip the dosai and cook for another 1-2 minutes on the other side.

8. Remove the dosai from the tawa and serve hot with chutney and sambar.
