Kodo Millet: A Nutritious Food Option for Diabetes Management -Varagu Adai






Varagu adai is a traditional South Indian dish that is made using varagu or kodo millet flour. Recipe for Varagu Adai:

Ingredients:

1 cup varagu flour ¼ cup grated coconut 2 green chillies, finely chopped 1 tsp ginger, finely chopped 1 small onion, finely chopped 1 small tomato, finely chopped A handful of curry leaves, finely chopped 1 tsp cumin seeds 1 tsp salt Water as required Oil as required

Method:

1. In a mixing bowl, add the varagu flour, grated coconut, chopped green chillies, ginger, onion, tomato, curry leaves, cumin seeds, and salt. Mix well.

2. Gradually add water to the mixture and mix until you get a smooth batter. The batter should be of a slightly thick consistency.

3. Heat a tawa or griddle on medium flame. Grease the tawa with a few drops of oil.

4. Pour a ladle full of batter onto the tawa and spread it evenly to form a thick pancake.

5. Cook the adai on medium flame until the bottom side turns golden brown. Drizzle a few drops of oil around the edges of the adai.

6. Flip the adai and cook the other side until it turns golden brown.

7. Repeat the process for the remaining batter.

8. Serve hot with chutney, sambar or any other side dish of your choice.
